Authentic Chicken Shawarma Recipe — Easy & Delicious
Chicken shawarma is one of the most beloved street foods across the Middle East and Mediterranean, and for good reason. Layers of spiced, marinated meat slowly roasted to perfection, wrapped in warm flatbread and drizzled with creamy garlic sauce — it is comfort food elevated to an art form. The great news is that you do not need a vertical rotisserie or a street cart to recreate this magic at home. With the right marinade, a hot oven or grill pan, and a little patience, you can achieve results that rival your favourite takeaway.
What Makes a Shawarma Authentic?
The soul of any great shawarma lies in the spice blend. Authentic shawarma seasoning is a complex, layered mixture that typically includes cumin, coriander, turmeric, smoked paprika, cinnamon, cardamom, allspice and a touch of cayenne. The balance of warm and earthy notes is what gives shawarma its unmistakable depth of flavour. Many home cooks make the mistake of using a single generic 'shawarma spice' packet — but blending your own is where the real magic happens.
For sourcing individual spices of exceptional quality, Gewürzland offers a superb range of freshly ground Middle Eastern spices, including whole cumin seeds, smoked paprika and ground cardamom that make an enormous difference in this recipe.
Ingredients
For the Marinade
- 800 g boneless, skinless chicken thighs
- 4 tablespoons plain yogurt
- 3 tablespoons olive oil
- Juice of 1 lemon
- 4 garlic cloves, minced
- 1½ tsp ground cumin
- 1½ tsp smoked paprika
- 1 tsp ground coriander
- ½ tsp ground turmeric
- ½ tsp ground cinnamon
- ¼ tsp ground cardamom
- ¼ tsp cayenne pepper
- 1 tsp salt, or to taste
- ½ tsp black pepper
For the Garlic Sauce (Toum)
- 4 garlic cloves
- ½ tsp salt
- 2 tablespoons lemon juice
- 120 ml plain yogurt or tahini
- 2 tablespoons olive oil
To Serve
- Warm flatbreads or pitta
- Sliced tomatoes and cucumber
- Pickled red onions or turnips
- Fresh parsley
- Sumac for dusting
Step-by-Step Instructions
Step 1 — Prepare the Marinade
In a large bowl, combine the yogurt, olive oil, lemon juice and minced garlic. Add all the ground spices and stir until you have a smooth, fragrant paste. Score the chicken thighs lightly with a knife to help the marinade penetrate deeper into the meat. Add the chicken to the bowl and toss thoroughly so every piece is well coated. Cover and refrigerate for a minimum of 2 hours, though overnight marinating gives the best results by far.
Step 2 — Cook the Chicken
Remove the chicken from the fridge 20 minutes before cooking to bring it to room temperature. You have two excellent options here:
- Oven method: Preheat your oven to 220°C (fan 200°C). Spread the chicken in a single layer on a baking tray lined with baking paper. Roast for 25–30 minutes until the edges are caramelised and slightly charred.
- Grill pan method: Heat a cast-iron grill pan over high heat. Cook the chicken thighs for 5–6 minutes per side until beautifully charred and cooked through.
Allow the chicken to rest for 5 minutes, then slice it thinly against the grain. This releases all those aromatic juices and gives you that characteristic shawarma texture.
Step 3 — Make the Garlic Sauce
Crush the garlic cloves with salt using a pestle and mortar until you have a smooth paste. Stir in the lemon juice, olive oil and yogurt (or tahini if you prefer a nuttier flavour). Taste and adjust the seasoning. For a thinner consistency, add a splash of cold water.
Step 4 — Assemble Your Shawarma
Warm your flatbreads directly over a gas flame or in a dry frying pan for 30 seconds each side. Spread a generous layer of garlic sauce, then pile on the sliced chicken, tomatoes, cucumber and pickled onions. Add a handful of fresh parsley and a dusting of sumac for that final authentic touch. Roll tightly and serve immediately.
Tips for the Best Results
- Use chicken thighs, not breasts. The higher fat content keeps them moist and flavourful during high-heat cooking.
- Do not skip the yogurt in the marinade. It tenderises the meat and helps the spices adhere beautifully.
- Char is your friend. Those slightly blackened edges are not burnt — they are flavour. Do not be afraid of the heat.
- Marinate overnight. A longer marinade time means deeper, more complex flavour in every bite.
- Rest before slicing. Always let the cooked chicken rest for a few minutes so the juices redistribute evenly.
What to Serve with Chicken Shawarma
Shawarma pairs beautifully with a wide range of sides. A simple fattoush salad with crispy pitta chips adds freshness and crunch. Hummus, baba ganoush or a tabbouleh are all classic accompaniments. For a more substantial spread, serve alongside roasted vegetables seasoned with za'atar and a bowl of fragrant rice pilaf with vermicelli noodles.
Make It a Feast
If you are cooking shawarma for a dinner party or a family gathering, lay everything out on the table mezze-style and let guests build their own wraps. It is relaxed, interactive and always a crowd-pleaser. The marinade works just as well with cauliflower florets for a plant-based version that impresses vegetarian guests without compromise.
