Authentic Gouvarlakia with Trachana — A Greek Soul Food Classic
If you have never heard of Gouvarlakia, you are about to discover one of Greece's most beloved comfort dishes. These tender, herb-scented meatballs are simmered slowly in a rich, tangy broth enriched with Trachana — a traditional fermented grain that gives this soup its signature sour depth. The result is a bowl of pure Balkan soul food that warms you from the inside out, no matter the season.
This recipe is rooted in the home kitchens of Greece and the wider Balkan region, where nothing goes to waste and simple ingredients are transformed into something extraordinary. Whether you are cooking for a quiet weeknight dinner or feeding a crowd on a cold Sunday, Gouvarlakia with Trachana never disappoints.
What Is Trachana?
Trachana is one of the oldest preserved foods in the Balkans and Mediterranean. It is made by fermenting cracked wheat or semolina with sour milk or yoghurt, then drying it into small irregular pieces. There are two main varieties:
- Sour Trachana (Xinó Trachanas) — made with sour milk, it has a pleasant tangy flavour and is the one traditionally used in Gouvarlakia.
- Sweet Trachana (Glykó Trachanas) — made with sweet milk, it produces a milder, creamier broth.
For this recipe, we use sour Trachana. When it dissolves into the broth during cooking, it thickens the soup naturally and gives it that unmistakable earthy, slightly tart character that sets this dish apart from any other meatball soup you may have tried.
Ingredients
For the Meatballs (Gouvarlakia)
- 500 g ground beef (or a mix of beef and pork)
- 80 g short-grain rice (such as Arborio), uncooked
- 1 medium onion, finely grated
- 2 cloves garlic, minced
- 1 egg
- 2 tablespoons fresh flat-leaf parsley, finely chopped
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- 2 tablespoons olive oil
For the Trachana Broth
- 150 g sour Trachana
- 1.5 litres good-quality chicken or vegetable broth
- 2 bay leaves
- 1 medium carrot, sliced
- 1 celery stalk, chopped
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh dill for serving
- Extra virgin olive oil for drizzling
Step-by-Step Instructions
Step 1 — Prepare the Meatball Mixture
In a large mixing bowl, combine the ground meat, uncooked rice, grated onion, minced garlic, egg, parsley, oregano, olive oil, salt and pepper. Mix well with your hands until everything is fully incorporated. The mixture should feel slightly sticky — this is exactly what you want. Cover the bowl and refrigerate for at least 20 minutes to allow the flavours to meld and the mixture to firm up slightly.
Step 2 — Shape the Meatballs
With lightly moistened hands, roll the mixture into smooth balls roughly the size of a walnut — approximately 3–4 cm in diameter. The uncooked rice inside each meatball will expand as it cooks, giving the Gouvarlakia their characteristic soft, pillowy texture. Set aside on a plate.
Step 3 — Build the Broth
Pour the broth into a large heavy-bottomed pot and bring it to a gentle simmer over medium heat. Add the bay leaves, sliced carrot and chopped celery. Allow the vegetables to cook for about 5 minutes before adding the meatballs. Do not stir at this stage — let the meatballs settle naturally on the bottom and sides of the pot to avoid breaking them apart.
Step 4 — Add the Trachana
Once the meatballs have been simmering for 15 minutes, add the sour Trachana to the pot. Stir gently and allow the soup to continue simmering on low heat for another 20–25 minutes. You will notice the Trachana slowly dissolving into the broth, creating a thick, creamy, slightly tangy base. Stir occasionally to prevent sticking at the bottom.
The quality of your spices makes a real difference in this dish. Dried oregano and freshly ground pepper are especially important — their aroma should be vivid and sharp. If your pantry spices have been sitting for too long, it is worth sourcing fresh ones.
Step 5 — Season and Finish
When the soup has reached a thick, velvety consistency and the meatballs are fully cooked through (the rice inside should be tender), remove the bay leaves. Add the lemon juice and taste for seasoning. Adjust salt and pepper as needed. The lemon juice brightens the entire dish and balances the earthiness of the Trachana beautifully.
How to Serve Gouvarlakia with Trachana
Ladle the soup into deep bowls. Finish each serving with a generous drizzle of extra virgin olive oil, a scatter of fresh dill and an extra squeeze of lemon if desired. Serve with thick crusty bread on the side to mop up every last drop of the broth.
This dish pairs wonderfully with a simple green salad dressed with red wine vinegar and olives. In Greece, it is often eaten as a full meal on its own — no starter, no dessert needed. Just a bowl, a spoon and good company.
Tips for the Best Gouvarlakia with Trachana
- Do not skip the resting time for the meatball mixture — this is what makes them hold their shape during cooking.
- Use a wide, shallow pot so the meatballs have plenty of room and cook evenly without stacking.
- Sour Trachana is key — sweet Trachana will produce a milder soup, but it will lack the traditional tang. Look for sour Trachana in Greek or Balkan grocery stores or online.
- Do not boil aggressively — a gentle simmer is all you need to keep the meatballs intact and the broth clear and flavourful.
- Leftovers thicken overnight — if you reheat the soup the next day, simply add a splash of hot water or broth to loosen it back to the right consistency.
Why This Recipe Works
The magic of Gouvarlakia with Trachana lies in the contrast of textures and flavours. The meatballs are soft and mild, the broth is tangy and thick, and the fresh dill and lemon at the end cut through the richness with a burst of brightness. Every element earns its place in the bowl.
It is the kind of recipe that feels ancient and timeless — because it is. Dishes like this have been feeding families across Greece, North Macedonia, Serbia and Bulgaria for generations, long before comfort food became a trend. And once you taste it, you will understand exactly why it has lasted so long.
