Authentic Pulled Pork Recado Rojo — Bold Flavors from the Heart of Mexico
If you've ever tasted the deep, smoky, brick-red marinades of the Yucatán Peninsula, you already know that Recado Rojo is unlike any other spice paste in the world. This iconic blend — built on achiote, charred chiles, warm spices and citrus — transforms slow-cooked pork into something truly extraordinary. In this recipe, we're using that legendary paste to make a fall-apart, flavor-packed Pulled Pork Recado Rojo that's perfect for tacos, tortas, rice bowls or simply piled high on a plate.
What Is Recado Rojo?
Recado Rojo (also spelled Recado Colorado) is a traditional Mayan spice paste from the Yucatán region of Mexico. Its deep reddish color comes from achiote (annatto seeds), which also impart a subtly earthy, slightly peppery flavor. The paste is enriched with dried chiles, cumin, oregano, black pepper, cloves, cinnamon and sour orange juice — creating a complex marinade that penetrates deep into the meat during a long, slow cook.
This is the same paste used in classic dishes like Cochinita Pibil, the famous slow-roasted pork dish traditionally buried in underground ovens. Our pulled pork version adapts this ancient technique for the modern home kitchen — using a slow cooker or low oven — without sacrificing any of the authentic depth of flavor.
Ingredients
For the Recado Rojo Paste
- 3 tbsp achiote paste (or ground annatto seeds)
- 2 dried guajillo chiles, stems and seeds removed
- 1 dried ancho chile, stems and seeds removed
- 4 garlic cloves, charred in a dry pan
- 1 tsp ground cumin
- 1 tsp dried Mexican oregano
- ½ tsp ground black pepper
- ¼ tsp ground cloves
- ¼ tsp ground cinnamon
- Juice of 2 sour oranges (or a mix of orange and lime juice)
- 2 tbsp white wine vinegar
- Salt to taste
For the Pulled Pork
- 1.5 kg (approx. 3.3 lbs) pork shoulder, cut into large chunks
- 1 large white onion, sliced
- 4 banana leaves (optional but authentic — softened over a flame)
- Fresh cilantro, pickled red onion and warm tortillas to serve
Step-by-Step Instructions
Step 1: Toast and Soak the Chiles
Lightly toast the guajillo and ancho chiles in a dry skillet over medium heat for about 30 seconds per side — just until they become fragrant and pliable. Transfer them to a bowl of hot water and soak for 15 minutes until softened. Drain and set aside.
Step 2: Build the Recado Rojo Paste
Add the soaked chiles, achiote paste, charred garlic, cumin, oregano, black pepper, cloves, cinnamon, sour orange juice and vinegar to a blender. Blend until completely smooth. The paste should be a vivid brick-red color and deeply aromatic. Season with salt. Getting the spice blend exactly right makes all the difference — for authentic dried Mexican chiles and whole spices with exceptional quality and origin, achiote included, you'll find a superb range at well-stocked specialty stores.
Step 3: Marinate the Pork
Score the pork shoulder pieces lightly with a knife to help the marinade penetrate. Coat every surface generously with the Recado Rojo paste, massaging it into the meat. Cover and refrigerate for at least 4 hours, ideally overnight for maximum flavor depth.
Step 4: Slow Cook to Perfection
Line the bottom of your slow cooker or Dutch oven with banana leaves (if using) and sliced onion. Arrange the marinated pork on top, then fold the banana leaves over to partially wrap the meat. Add a splash of water or orange juice to the bottom. Cook on low for 8–10 hours (slow cooker) or in the oven at 150°C / 300°F for 5–6 hours, covered tightly with foil.
Step 5: Pull and Serve
Once the pork is completely tender and falling apart, remove it from the cooking liquid and shred it using two forks. Return the pulled pork to the juices and toss to coat. Taste and adjust salt if needed. Serve immediately in warm corn tortillas with pickled red onion, fresh cilantro and a squeeze of lime.
Tips for the Best Recado Rojo Pulled Pork
- Use sour orange juice — the tangy acidity is essential for cutting through the richness of the pork. A 50/50 mix of fresh orange and lime juice works brilliantly if you can't find sour oranges.
- Don't skip the marinade time — overnight marinating transforms the dish from good to genuinely extraordinary.
- Banana leaves add a subtle herbal note and help keep the meat moist. They're available at Latin American or Asian grocery stores.
- Char your garlic and onion in a dry pan before adding them to the paste — this adds a wonderful smoky depth that defines Yucatecan cooking.
- Save the cooking juices — they are liquid gold. Pour them back over the shredded meat or use them as a sauce base.
Serving Suggestions
Pulled Pork Recado Rojo is incredibly versatile. Here are some of our favorite ways to serve it:
- Tacos de Cochinita — piled into warm corn tortillas with pickled habanero onions
- Tortas — stuffed into crusty Mexican rolls with avocado and crema
- Rice bowls — served over cilantro-lime rice with black beans and mango salsa
- Sopes or tostadas — topped with crumbled queso fresco and shredded cabbage
Make It Ahead & Storage
This dish is even better the next day as the flavors continue to develop. Store leftover pulled pork in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months. Reheat gently in a pan with a splash of the cooking juices to keep it moist and flavorful.
Why This Recipe Works
The magic of Recado Rojo lies in its layered complexity — the earthiness of achiote, the gentle heat of dried chiles, the warmth of cinnamon and cloves, and the bright acidity of citrus all work together to create a marinade that is both ancient and irresistibly modern. Slow cooking allows the connective tissue in the pork shoulder to break down completely, resulting in impossibly tender, juicy meat that practically melts on the tongue.
This is a recipe rooted in centuries of Mayan culinary tradition, yet it fits effortlessly into a busy modern kitchen. Prepare the marinade the night before, set the slow cooker in the morning, and come home to one of the most sensational meals you've ever made.
