Smashed Beef Kebab with Cucumber Yogurt — The Classic Home Recipe
There is a technique borrowed from the world of smash burgers that completely transforms a humble ground beef kebab into something extraordinary: high heat, a flat surface and deliberate pressure. The result is a patty with shatteringly crisp edges, a juicy interior and deep, caramelised flavour that a traditional shaped kebab simply cannot match. Pair it with a cool, herby cucumber yogurt and you have a complete meal that feels like a restaurant dish — made entirely at home, on a weeknight.
Why the Smash Method Works for Kebab
When you press seasoned ground beef firmly against a screaming-hot pan or griddle, two things happen simultaneously. First, the Maillard reaction kicks in hard across the maximum possible surface area, creating a deep brown crust packed with savoury, complex flavour. Second, the fat renders quickly and bastes the meat from within, keeping the centre tender and moist even as the exterior crisps up.
Traditional skewered kebabs are great, but they cook by different rules. The smash method rewards you with texture contrast — crunchy outside, yielding inside — in a fraction of the time and with far less equipment. No skewers. No grill. Just a cast-iron pan and a sturdy spatula.
Ingredients
For the Smashed Kebab Patties
- 500 g ground beef (ideally 20 % fat for flavour and juiciness)
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp ground coriander
- ½ tsp dried oregano
- ¼ tsp chili flakes (adjust to taste)
- 1 tsp fine sea salt
- ½ tsp freshly ground black pepper
- 2 garlic cloves, finely grated
- 1 tbsp olive oil (for the pan)
For the Cucumber Yogurt
- 250 g thick plain yogurt (Greek-style works beautifully)
- ½ cucumber, coarsely grated and squeezed dry
- 1 small garlic clove, finely grated
- 2 tbsp fresh mint, finely chopped
- 1 tbsp fresh dill or flat-leaf parsley, finely chopped
- 1 tbsp lemon juice
- Salt and pepper to taste
To Serve
- Warm flatbreads or pitta
- Thin red onion rings
- Cherry tomatoes, halved
- Fresh chili slices (optional)
- Extra lemon wedges
Step-by-Step Instructions
Step 1 — Make the Cucumber Yogurt First
Combine the thick yogurt, squeezed cucumber, grated garlic, mint, dill and lemon juice in a bowl. Season generously with salt and pepper, stir well and refrigerate while you cook the kebab. The cold sauce against the hot, crispy patties is essential to the whole experience.
Step 2 — Season the Beef
Place the ground beef in a large bowl. Add the cumin, smoked paprika, ground coriander, dried oregano, chili flakes, salt, pepper and grated garlic. Mix with your hands until the spices are evenly distributed — but stop as soon as everything is combined. Overworking the meat makes it dense and tough.
Step 3 — Portion and Smash
Divide the seasoned beef into six equal balls, roughly 80–85 g each. Do not press or shape them into patties yet — keep them loose. Heat a cast-iron skillet or heavy griddle over high heat until it begins to smoke lightly. Add the olive oil, then place two or three beef balls in the pan, leaving space between them. Immediately press each ball flat with a wide spatula or the bottom of a small saucepan. Press hard — you want them thin, roughly 8 mm thick. Hold the pressure for five full seconds.
Step 4 — Cook to a Crust
Leave the patties completely undisturbed for two to three minutes. Do not press again. Do not move them. You will see the edges turn deep brown and the top begin to look cooked around the perimeter. That is your cue to flip. Cook the second side for just 60–90 seconds — the crust has already formed and the meat only needs to finish through. Remove and rest briefly on a warm plate.
Step 5 — Assemble and Serve
Spread a generous spoonful of cold cucumber yogurt on a warm flatbread. Lay two smashed kebab patties on top. Add red onion rings, cherry tomatoes and fresh chili if you like. Finish with a squeeze of lemon and fold or roll to eat.
Tips for the Best Smashed Beef Kebab
- Fat content matters: Lean mince dries out and will not crisp the same way. Aim for at least 18–20 % fat.
- Dry cucumber thoroughly: Squeeze grated cucumber in a clean cloth or kitchen paper until no more liquid drips. Watery yogurt sauce loses its punch.
- Do not crowd the pan: Cook in batches. A crowded pan steams the meat instead of searing it.
- Temperature is everything: If the pan is not hot enough to smoke slightly when the oil hits it, wait longer. A cool pan means no crust.
- Season boldly: Ground beef can take a lot of spice. The cumin and smoked paprika are the backbone — be generous.
Make It a Full Meal
These smashed kebab patties work equally well inside pitta pockets, on top of a salad bowl with hummus and roasted peppers, or served alongside oven-baked fries with the cucumber yogurt as a dipping sauce. Leftovers reheat well in a dry skillet over medium-high heat for two minutes per side — they will re-crisp beautifully.
Storage
Cooked patties keep in an airtight container in the refrigerator for up to three days. The cucumber yogurt stays fresh for two days — stir before serving as some liquid may separate. Do not freeze the yogurt sauce.
